
Back to school means less outdoor time in this house. So it is best to find creative ways to get outside during the week. If you bring your child home for lunch you can have a picnic in a local park or at the school playground. It takes a little planning, but nothing beats some al fresco dining with lots of outdoor play.
I love thermos lunches as I have featured before with fish soup, hot dogs in a thermos or the awesomely healthy mac and cheese from Courtney.
Another favorite thermos lunch in our house is noodles with spinach sauce. It is very easy, healthy and fast to make.
This is what you need
500 grams spinach
1 dl milk
2 cloves garlic
Chicken stock
Salt
250 grams Noodles
This is how you do it:
Wash and rinse the spinach and pick off the stems.
Put the spinach in a pan and sauté. When the spinach is reduced in size add milk and chicken stock. Use an emersion blender to puree.
Boil your noodles and mix them with spinach puree.
Put in a thermos and serve with pita or bread.
